Cold maceration during 12 days under protection of carbon dioxide to protect the precursors of aromas and the colors. Fermentation in tank with managed temperature. Vatting time of 18 days, soft and delicate pneumatic pressing. Maturing in oak (" new oak)
Beautiful deep cherry color, brilliant.
A bouquet of ripe black fruits (blackcurrant, cherry) with spices (cinnamon, pepper). A little bit smoky.
Powerfull, roundness and balance are here in the right proportion. Peppery, supple tannins and fruits remains present.
Rabbit stew with red wine, Epoisses (cheese).
