Savigny-les-Beaune 1er Cru
Planted in 1995 on a brown and ochre clay and limestone soil, of average to strong granulosity.
Pressing shielded from the air (press under carbon dioxide), fast and quite smoothly, of ripe grapes. Musts are filtered before the alcoholic fermentation to make, only, grape juice ferment. Breeding in oak during 16 to 22 months (20 to 30 % new oak). Stirring of the lees. Long breeding to bring a lot of stability and a very good ageing.
Gold highlights, clear and brilliant.
Ample and generous. Bouquet of white flowers, butter and brioche.
Quite fleshy, strength, deep in structure, well balanced between the minerality and the fat.
